Everyone needs a little convenience from time to time. Often breakfast is the first thing to go early in our day because it is inconvenient to spend time making it instead of sluggin’ our coffee on the way out the door, or heading to the local Starbucks to grab a breakfast sandwich.
You guys know I am big into meal prep, but usually for me it stops at prepping 2 proteins for the week, 2 carb sources and calling it a day. Effective but boring. Our resident Martha Stewart (aka Lacey) created this simple but delicious option for our mornings. She’ll be blessing us with recipes on the reg so get ready for some tasty treats! It even was a winner for my husband, Nate, who is a touch picky.
This bulk prep breakfast sandwich recipe is about to change that and make all our mornings better. A legit, tasty, easy option that kicks you off with a powerful 23 grams of protein, 30 grams, and only 8 grams of fat.
Ingredients:
12 english muffins
6 large eggs
12 egg white (or 1 1/2 cups liquid egg whites)
12 thin slices cheddar cheese
24 oz sliced deli turkey
1 tsp salt
pepper – 1/2 tsp
paprika – 1/2 tsp
garlic powder – 1/2 tsp
Directions:
Pre heat oven to 350 degrees. Whisk eggs, egg whites, and seasonings together and pour into a greased 9″ x 13″ pan. Bake 15-20 minutes until eggs are cooked through. Allow to cool, then cut into 12 equal portions.
Slice english muffins in half. Assemble the sandwiches by placing 1 egg portion, 1 cheese slice, and 2 oz sliced deli turkey on bottom layer of the english muffin, and close up the sandwich with the other half of the english muffin. Spray a piece of foil with cooking spray and wrap each sandwich individually. Place in a gallon freezer bag. Store in fridge for up to 4 days, or in the freezer for up to 1 month.
Reheating:
Allow sandwich (es) to defrost in the fridge overnight.
Bake for 20 minutes at 375 in the oven, or 10 minutes in the air fryer.

23 Grams Protein, 30 Grams Carb, 8 Grams Fat
