This week features a client spotlight – I have teamed up with client and best friend of 16 years, Lacey, to share this super simple, macro friendly recipe with you!
I like to describe Lacey as a younger cross between Martha Stewart (without the jail time) and Joanna Gaines. Everything she touches in the home turns to gold, and her cooking is no exception. Her meals always feature simple ingredients, but pack a flavorful punch and are macro friendly! Since my idea of cooking is buying a Costco rotisserie chicken; I thought you all might enjoy one of her fabulous dishes. Honestly, my favorite thing every time she feeds me (which is often) is how I think “This is so simple, and so good! I could do that!” No obscure ingredients you use once then shove in the back corner of your pantry. No elaborate cooking times and techniques. Just good, simple, delicious meals for you and your family.
2 lbs broccoli, cut in florets
2 lbs salmon filet
1 tbsp everything bagel seasoning
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
Avocado or olive oil spray
Cooked rice, for serving
Preheat oven to 375 f. Place broccoli on a parchment lined baking sheet. Spray with oil and season with salt, pepper and garlic powder. Toss until evenly coated. Bake broccoli for 10 minutes. Remove pan from oven, move broccoli to edges of pan to make room for salmon. Place salmon on the sheet pan, spray with oil and season with everything bagel seasoning. Bake salmon and broccoli for 15-20 more minutes. Serve over rice, if desired.
